Candied Carrots

These sliced carrots are glazed in a buttery brown sugar sauce for a colorful, crowed-pleasing side dish.



Candied Carrots

Prep Time: 10 Minutes
Cook Time: 30 Minutes

1 lb. carrots, cut into 2-inch pieces
2 Tablespoons butter, diced
1/4 cup packed brown sugar
1 pinch salt
1 pinch ground black pepper

1.)  Place carrots in a pot of salted water.

2.)  Bring water to a boil, then reduce heat to a high simmer, and cook the carrots about 20 to 30 minutes. Do not cook the carrots to a mushy stage.

3.)  Drain the carrots, and reduce the heat to its lowest possible setting, and return the carrots to the pan.

4.)  Stir in the butter, brown sugar, salt and pepper.  Cook for about 3 to 5 minutes, until the sugar is bubbly.  Serve hot!

5.)  Yields: 4 servings


6.) Note: I doubled the butter and brown sugar, and I think I cooked the carrots between 10-15 minutes. I also used a crinkle cutter to cut the carrots into 2-inch pieces.  I love these carrots! This is "the best" glazed cooked carrot recipe I've come across so far.
